It’s moving day! Needless to say, life has been a little on the chaotic side lately. In order to curb the inevitable stress of packing up one’s life, I’ve been doing my best to take good care of myself. I haven’t been perfect (wine and brownies are being consumed regularly), but I making sure to eat well, get good sleep, do yoga, go dancing, and take lots of cuddle breaks.
It is extra important in times of major transition to nurture yourself. It’s so easy to toss self-care aside when the pressure is on, but that’s when you need to love yourself the most intensely! The better you care for yourself, the smoother the whole experience, and therefore the less taxing on you and everyone around you.
I made a delicious and super nutritious wrap in the middle of a packing day, and its photo turned out to be so popular on facebook and instagram that I decided to share the recipe with you. I am not one for exact measurements, so below are approximations. Feel free to experiment with proportions and make it something you love.
Roasted Rep Pepper Hummus Veggie Wrap with Tahini Lime Dressing
Ingredients:
– 1 can of garbanzo beans, drained and rinsed
– Roasted red peppers (Trader Joe’s has a good jar)
– Tahini
– 1 shallot
– olive oil
– 1 lemon
– 1 lime
– ground cumin
– ground cayenne pepper
– salt
– pepper
– whole wheat lavash bread
– mixed baby greens of your choice
– tomato, sliced
– cucumber, sliced
– radish, sliced
– avocado
Step 1: Make the hummus
In a blender or food processor, combine garbanzo beans, a scoop of tahini (about 2 Tbsp), half a roasted red pepper, half a shallot, a drizzle of olive oil, about 1 tsp of cumin, a sprinkle of cayenne, the juice of one lemon, salt and pepper to taste. Blend until smooth. Taste and adjust seasoning to your liking (I usually add more lemon because I love it to be extra lemony).
Step 2: Make the dressing
In a small bowl, whisk together about 1/3 cup of olive oil, 1 Tbsp of tahini, the juice of one lime (at least, you may need more depending on how juicy the lime is), a sprinkle of cumin, salt and pepper to taste. Set aside.
Step 3: Make the wrap
Spread a layer of hummus on the lavash. Then add a layer of mixed greens, followed by slices of tomato, cucumber, and radish. Top with slices of avocado to your liking. Finally, drizzle some of the dressing on top (you don’t need a lot as there is already a lot of flavor). Roll it up, cut in half, and enjoy!
